The Company
Founded in the 1880’s this well known, respected and successful bakery is a highly profitable operation with retail and wholesale trade. The properties comprise a modern well-equipped bakehouse facility in Castle Douglas town centre and four retail shops in Castle Douglas, Dalbeattie and Kirkcudbright. There are presently 48 staff employed in the business, under a mix of full and part time contracts, including eight bakers. Offering a wide range of products the business prides themselves in the production of fresh produce through skilled hand baking and traditional recipies.
The Role
The purpose of the role is to manage all aspects of the Bakery including operations management, leading a team of 20 employees, quality control, H&S compliance, inventory management and liaising with purchasing and sales to ensure the business runs smoothly. The main purpose being to organise the bakery production on a daily basis.
Main Duties:
• To manage the bakery team and ensure adequate staffing through rotas
• To oversee the production operation striving for best practice and efficiency
• To ensure regular cleaning and maintenance is carried out
• To ensure quality is maintained through recipes
• To encourage motivation and innovation across the bakery team
• To manage inventory through stock checks, monitoring and recording
• To comply with relevant regulations and standards i.e. Health & Safety
• The ability to progress to the buying and ordering process
The Candidate
Knowledge:
• You will have knowledge of and experience of working in a bakery environment
• You will have knowledge and/or experience of running a bakery
Skills:
• Be skilled in the production of hand baking
• You will possess basic office administration and computer skills to support and enhance work
• Interpersonal skills to take responsibility for and facilitate the work of other individuals and groups
