Head Cheese Maker

An exciting opportunity has become available at The Ludlow Farmshop for a dairy production manager. The dairy has been instrumental in the success of the farm shop over the past 12 years and is nationally recognised as a centre of excellence. This is a varied role where you will manage a small highly skilled team in the production of 10 different cow’s milk cheese and 3 different ewes milk cheese, in addition to the cheese the dairy also produces yogurt, butter and ice cream.

As the dairy production manager you will be responsible for the following:

• The collection of milk from our dairy
• The pasteurisation of the milk
• Planning of the cheese and dairy production to meet demand across our retail, hospitality and online businesses.
• The production of the whole range of dairy products
• The management of the cheese maturation process.
• Monitoring of cheese and dairy products to ensure consistent high quality
• The delivery of a 5 star HACCP operation
• Keeping the dairy areas and equipment clean in accordance with our HACCP plan
• All fridge and maturation room temperature checks.
• Stock taking.
• The day-to-day coordination and management of staff.
• Communication across the site with other managers to ensure timely delivery of finished product.
• New product development

We are looking for a passionate, knowledgeable cheese maker with experience of producing a wide range of cheese styles who would like to take on and develop further an existing portfolio of products including butters, ice cream and yogurts.

The successful candidate will have significant expertise in all aspects of cheesemaking and compliance with modern food safety systems, who can very quickly come up to speed leading our dairy production team. This person will need to be extremely detail oriented, be a good communicator, a natural planner and manager of staff and have a positive can-do attitude.
