Head of Bakery Operations.

This role comprises the general day to day management of a successful bakery.  We bake breads, confectionery, & viennoiserie for our own shops, and wholesale customers.

You will be responsible for maintaining excellent product quality, a motivated team and a healthy P&L.

Key responsibilities include:


  • Ordering goods from suppliers to meet production requirements
  • Programming production to meet customer requirements
  • Periodic analysis of supplier costs to maintain margins on goods sold
  • Periodic analysis of production number to maximise freshness, and availability and minimise wastage
  • Implementation and Maintenance of Food Safety Management System with regard to current legislation
  • Maintenance of safe working environment with reference to current legislation
  • Proactive preparation for seasonal productions
  • Periodic audits to ensure optimum utilisation of resources

Leadership and people management

  • Day to day responsibility for
    confectionery bakers (dayshift)
    bread bakers (nightshift)
    Janitorial team
    Logistics team
  • Maintain a level of staffing through recruitment to suit the production requirement
  • Develop and implement productivity targets for teams
  • Support team leaders in harnessing the teams to achieve excellence and efficiency
  • Annual appraisals of staff

Facilities and Maintenance

  • Using our existing network of service and engineering contractors to ensure that equipment is maintained in operational condition.
  • Assess improvements to building and facilities to maintain a safe and effective working environment.

You will be based at our production headquarters in South London.  Working hours are generally Monday - Friday 8am-4pm.
